We prepared our beans using our Pride of India Mild & Spicy Curry Powder, Pride of India Tumeric Powder and HomeStyle Butter Beans. They are perfect for bunny chows, with rice (basmati, brown, jasmine or cauliflower rice) or your choice of flatbread (roti, paratha, naan or puri). Ideal for a meat-free, plant-based or vegan diet.
Serves 4.
Ingredients
3 tbsp oil
1 onion, finely sliced
3 tsp Pride of India Mild & Spicy Curry Powder
½ tsp Pride of India Tumeric Powder
250g HomeStyle Butter Beans, boiled
1 tomato, grated/blended
2 potatoes, cleaned & cut into pieces
fresh coriander, for garnishing

Method
Soak HomeStyle Butter Beans overnight or for a few hours. Add water to cover and boil until tender.
Heat oil in a pot. Sauté onion until golden brown.
Add Pride of India Mild & Spicy Curry Powder, Pride of India Tumeric Powder and fry for approximately 1 minute. Add a little water, if necessary.
Add tomato and cook until soft.
Add potatoes and cook until almost tender. Add a little water and salt to taste.
Add the boiled HomeStyle Butter Beans and cook for approximately 10 minutes or until the potatoes are soft. Add a little salt to taste.
Cook until the water has reduced and you achieved your desired consistency.
